S’Mores Cookies

This would have been a great cookie, if it wasn’t so flat.  It tasted great, but was just so flat!  When I picked it up, it would bend/break in half.  Oh well, I’ll definitely have to try it again.  Maybe use a different baking sheet?

  • 3/4 cup softened butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups flour
  • 1 cup graham cracker crumbs (use food processor as a time saver)
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cups semi-sweet chocolate chips
  • Mini marshmallows – 3 per cookie
  • 2 Hershey bars, chopped up.  (I used the mini sized chocolate bars.)

In a small bow, combine flour, graham crackers crumbs, salt, and baking soda.

In a stand mixer, combine the butter and sugars until fluffy.  Mix in egg and vanilla.  Slowly add the dry ingredients (flour, graham crackers, salt, baking soda.)   Stir in the chocolate chips.

Use cookie dropper or tablespoon onto cookie sheets. Bake for 8-9 minutes, and remove from the oven. Add 3/4 marshmallows and a Hershey bar pieces into each cookie. Return to the oven and bake an additional 2-3 minutes until fully cooked.<– watch these!  (My marshmallows got too brown the first time.)

Cool cookies on a wire rack.
