5 Minute Chocolate Mug Cake

  • 4 tablespoons flour
  • 5 tablespoons sugar
  • 2 tablespoons cocoa
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 egg
  • 3 tablespoons milk (2% okay)
  • 3 tablespoons oil
  • Splash of vanilla extract
  • 3 tablespoons chocolate chips
  • 2 microwave safe coffee mugs

My steps:

  1. Mix flour, sugar, cocoa, baking powder and salt in a bowl
  2. Mix egg, milk, oil in separate bowl
  3. Add wet ingredients (milk, egg, oil, vanilla) to dry ingredients (flour, sugar, cocoa, baking soda, and salt)
  4. Stir in chocolate chips
  5. Spray 2 microwave safe mugs with non stick cooking spray
  6. Divide batter evenly
  7. Cook for 60-90 seconds (depending on microwave oven) <– watch it!!!

I was very excited when I found this recipe online because I had all the ingredients at home.  (I hate going out to buy something specific for a recipe that I’ve never made before.)  This cake is very moist, but not too chocolatey until you reach the chocolate chips.   All of the chips landed at the bottom of the mug, which was slightly disappointing.  (I like a more even distribution of chips in my cake.)

Tips:

  • Stand infront of the microwave and watch it rise.  Don’t be afraid to open it up the microwave to see.
  • Put a paper plate or microwave safe bowl at the bottom of the mug, it gets messy.
  • This recipe could really divide into 3 small cakes.  It just depends on size of the mugs.  I recommend short/wide mugs over tall and skinny.
  • Compliment with a scoop of vanilla ice cream!
